Today (January 27th) is National Chocolate Cake (NCC) Day. When it comes to desserts...cake takes the cake. I'm thrilled that it has its own special day and it can only be made better it it's a dark chocolate cake.

Why do we celebrate NCC Day today??? I don't know and I certainly don't care. This gives me a reason to have an extra piece of delectable goodness that's fluffy and when it's made correctly, defies gravity. To make the celebration extra celebration, add a frosty mug of milk.

There are three things to do on Chocolate Cake Day. To bake, to decorate and to eat the chocolate cake. When it comes to baking my own cake from scratch, I figured, why should I take that chance.

There are professionals throughout the Southern Tier that make it their business to make a cake. I'm helping the local economy and I get to eat a cake that's edible.

Why should I waste my valuable time decorating the cake when I'm just going to eat it anyway

The history of the chocolate cake begins in 1764 when Dr. James Baker discovered how to make chocolate by grinding cocoa beans between 2 big circular millstones. That's a discovery that I can embrace...and eat.

In the 1920s, a company called O. Duff and Sons created the first boxed cake mix. In 1947, General Mills released the first "just add water" Betty Crocker cake mixes. The flavors to choose from were Ginger, Spice, Yellow and White. We didn't get the chocolate cake mix until 1948.

Now that we've had our history lesson, let's take a break and celebrate the third (and most important) reason that we celebrate this holiday. As Queen Marie Antoinette said, "LET THEM EAT CAKE."  Look I snuck in another history lesson.

So I shall eat chocolate cake (or any other kind that comes my way) and celebrate the day that literally takes the cake.
