With all the company who tend to just drop in, sometimes I feel like my house is a revolving door. I can only imagine how much more so it'll be when my son gets older and his friends are coming and going as well.

I'm completely unable to have people in my house and not offer them something to eat and drink. The few times I haven't offered a meal to someone, I've felt guilty for days. I supposed this is because of the way that I was raised and that was to always make sure that every mouth in the house was fed and guests were made to feel comfortable and at home.

I try to always keep my pantry and fridge filled with "easy to throw together and create a meal" ingredients since I never really know when I'll be making a last minute meal. One of my go-to meals is breakfast casserole. People love the flavors of this meal that takes a whole 45 minutes start to finish to make. Oh, and I don't just serve this casserole for breakfast. It makes a wonderful lunch or dinner, too!

Crowd Pleasing Breakfast Casserole

Ingredients:
1 bag of shredded hash browns
1 medium onion, chopped
1 medium green pepper, chopped
1 tube of raw sausage
1 32 oz container of egg beaters, whatever flavor you'd like
Shredded cheese (optional)

Preheat oven to 350 degrees.

Directions:
Brown the sausage, using a spatula to break it up. Once the sausage is ground, sauté the onion and green pepper. After the sausage, pepper and onion are cooked, remove from heat and drain, then put the sausage, peppers and onions into a bowl and set to the side. Spray the bottom a casserole dish with non-stick cooking spray and then lay the entire bag of shredded hash browns on the bottom of your casserole dish. Top the hash browns with the sausage, onion and peppers and then pour the entire container of egg beaters over what you've put in the casserole dish. Sprinkle cheese over the top if you want and then bake on 350 for 35 minutes or until the egg is completely cooked.
