Another 90 degree day in the Southern Tier, it might rain, it may not. It's hard to keep your cool on days like this, especially if you have to be outside for any period of time.

A friend of mine shared with me an amazing summer drink that is perfect for a hot Southern Tier summer day that's pretty easy to make and should satisfy anybody you know that likes lemonade and / or watermelon.

Here's what you will need:  (seedless) watermelon cut up in pieces, fresh mint, 2 fresh lemons, sugar and a blender.

Recipe for Refreshing Watermelon Mint Lemonade:

  • Squeeze 2 fresh lemons in to blender
  • Add 1 cup of sugar
  • Add a handful of fresh mint (I have used spearmint, lemon balm or even a little fresh basil; it's up to you though what you may have fresh in the garden or store)
  • Fill the space leftover (in blender) to the top with cut up watermelon pieces
  • Blend all the above
  • Optional:  Add a splash (or 2) of Vodka and blend again
  • Serve in a glass, add left over foam from blender and garnish with a sprig of mint and a piece of watermelon on the side of the glass
  • Enjoy!
