OK, I must admit, I never expected to leave that zucchini in that garden THAT long.  It's now 3 inches larger than my work out shoes and very green, which made it hard to spot in the first place, which explained why I posting this to my blog today.  So what do you do?  A friend told me about a free recipe web site called allrecipes.com where you can actually list the ingredients you already have in your fridge and they will spit out recipes with those ingredients included so no shopping is needed.

I had the overly large green zucchini, I had Lupo's pork sausage in the freezer, eggs-no problem, yes to an onion, salt, pepper, italian season...I was ready to go to town.  I didn't have cottage cheese or shredded colby jack but that's Ok, I had plenty of mozzarella cheese and I read where other people liked that better anyway.  In a little over an hour, I had a great dinner that didn't cost me much.  I will tell you the trick is keeping the zucchini as whole as possible, just poke it with a fork but do not cut in half  before you put it in the micro oven for 5 minutes before you cool for 10 minutes.  Otherwise, the skin of the zucchini becomes too tough.  Give it a try and let me know what you think.  If I can do it and no screw it up, anybody can.  Good luck!
