My husband really is something special. I know a lot of wives say that, but Jay does so much for me, including whipping up soup whenever I'm not feeling well, or just  need a little cheer. Soup is one of my most favorite things in all of the world and it doesn't matter the season, I'm always in the mood for it, but especially this time of year when it's so cold.

If you like potatoes, leeks, and onions, you're going to love this soup that Jay makes for me regularly.

Potato Leek Soup

Ingredients:

  • 2 tablespoons unsalted butter
  • 1 cup sliced leeks
  • 1 cup chopped onion
  • 1 2/3 cups chicken broth
  • 4 cups milk
  • 1 1/3 cups instant mashed potato flakes
  • 1 teaspoon salt
  • 1/2 teaspoon celery salt

Directions:

Melt the butter in a large pot over medium heat. Once the butter has melted, sauté the leeks and onion in the butter for 5 minutes, or until they get tender. Once everything is tender, pour in the broth and milk and mix everything really well. Bring the mixture to a boil then reduce the heat to low and simmer for 5 minutes. Stir in the instant mashed potato flakes, salt and celery salt. Continue cooking on low until the soup has thickened and is heated through, stirring every once in a while.
