Like many of you, I grill outside year round.  And fall is a great time to keep those summer flavors alive by grilling outdoors for a great meal,  to go with that beer or glass of wine before relaxing to the campfire on a cool night in the Southern Tier.

One of my favorite flavors in pineapple.  There's something about the sweetness and freshness of pineapple and when you cook with it, you'll find it adds an incredible flavor to means and vegetables, especially on the grill.

My friend shared a super easy recipe with me.  Since I had most of the ingredients on hand, I decided to experiment a little with a tasty and healthy meal that was full of flavor.  In fact, it came out so well, I plan to do it again over Columbus Day weekend for a little get together with friends.

Here's what you'll need (serves 4):

  • 1 lb. boneless, skinless chicken breasts or thighs
  • 1/4 tsp. salt
  • 1/4 tsp. ground cumin
  • 1/4 tsp. ground coriander
  • 1/4 tsp. paprika
  • 1 cup of finely chopped fresh (or canned) pinepple
  • 1 cup of finely chopped tomato from the garden
  • 1/2 cup finely chopped avocado
  • 1/4 cup finely chopped white onion
  • 1 Tbs. fresh lime juice

Pound the chicken to an even 1/2-inch thickness or pick out thin chicken breasts that are ready to go.  Mix the salt and spices together in a small bowl.  Season the chicken with the spice blend.  Grill over medium heat until cooked through (3-4 minutes per side, depending on your grill).

Combine the pineapple, tomato, avocado, onion and lime juice in a bowl.  Slice the chicken and spoon the salsa over it.
