Growing up I always felt a little bit left out. I didn't grow up in a home where freshly baked cookies were waiting for us after school, or where an entire day was set aside during the Christmas season to make cookies together as a family.

This isn't a slam on my mom or grandma, we just weren't a dessert type of family. I mean, if you give me a bunch of foods that are so random that there's no possible way that a meal could be made using them, I'll prove you wrong and cook up something delicious. But baking just isn't something that I'm good at.

For 364 days of the year, my Kitchen-Aid mixer looks at me sadly from the counter because I don't use it, but on one day of the year, it perks up because it knows it's going to get a good workout. And that day is the day that my family bakes Christmas cookies, a tradition my husband insisted on starting.

Up until a few years ago, I'd agonize over the looming arrival of cookie-making day. That was until I was trolling Pinterest one day and stumbled on a recipe by Somewhat Simple that allows for several cookie variations, and only three things are needed to make them. I decided to give it a try and wouldn't you know- it worked and the cookies are delicious!

I churned out 62 cookies in less than 30 minutes from start to finish. Hallelujah! But wait, there's more! These cookies can be frozen after being baked, so you can make them when you have a couple of extra minutes in your day (like that ever happens, right?) and then put them in freezer bags and into the freezer. Just be sure to take them out with enough time to thaw- you don't want to serve frozen cookies.

To make these cake mix cookies, you'll need a mixer (hand or otherwise), a box of cake mix, 2 eggs, and 1/3 cup of vegetable oil. And of course, a baking sheet.

Turn your oven to 350 degrees. While the oven is warming up, empty the contents of the cake mix packet into a bowl or mixing bowl along with two eggs and 1/3 cup of veggie oil.

Mix all ingredients well and then using a teaspoon, plop the dough by the spoonful onto an ungreased cookie sheet, making sure each plop of dough is separated from each other by about one inch. Cook at 350 for 7-9 minutes or until the edges start to brown.

The beautiful thing about this recipe is that you can use whatever flavor cake mix you want. Also, if you want to add some color to the plain white cookies, you can do so by playing with food coloring. Don't forget to let the cookies cool before either frosting or freezing!
