Apple trees in the Southern Tier are loaded.  I went picking last week and it took me only 5 minutes to pick 12 pounds of apples.  If you're wondering what to do with all these amazing apples, how about a 5 minute apple dip?  I have a very simple recipe that will make the 'Taste Of Home' Cooking School, coming to Binghamton next month, take notice.

Here's what you will need to serve about 8 people:

>  1 (8 ounce) package of cream cheese (soften by leaving out of fridge for an hour)

>  1/2 cup of brown sugar

>  1 tablespoon of vanilla extract

Directions:

1.  Stir together the softened cream cheese, brown sugar and vanilla extract until the sugar has dissolved, and the mixture is whipped or smooth.

2.  Serve with sliced apples and (optional) graham crackers.  Yum!  Enjoy!
