It's almost that time of year for cookouts and sure, you could make the same old potato salad as everybody else, or you could spice things up! I found this recipe in a 20 Minute or Less cookbook and decided to give it a try this weekend.  If you're scared of things being too spicy, not to worry because this doesn't have as much heat as it does tasty spice.

Ingredients:

  1. 8 large potatoes
  2. Large pinch of salt
  3. Large pinch of sugar
  4. 3 garlic cloves, chopped
  5. 1 Tbsp vinegar of your choice
  6. Large pinch of ground cumin
  7. A pinch of cayenne pepper
  8. 3 Tbsp extra virgin olive oil
  9. 3 Tbsp chopped fresh cilantro leaves
  10. 3 chopped hard boiled eggs, if you'd like.

Directions:

Chop the potatoes into chunks.  Put them in a pan, pour water over them and add the salt and sugar.  Bring to a boil, then reduce heat and boil gently for about 10 minutes or until the potatoes are tender. Drain well and leave in strainer to cool.  Once cooled, sprinkle the garlic, vinegar, cumin and cayenne over the potatoes.  Toss with olive oil and chopped hard boiled eggs (if you'd like the eggs, if not leave them out). Serve cold.
