I served this side dish at Thanksgiving dinner last year and it was such a hit (seriously, there wasn’t a morsel left in the bowl) that I think I’m going to have make it part of Thanksgiving dinner every year. And wouldn’t you know- I found this recipe from Ree Drummond, host of the Food Network Show ‘The Pioneer Woman’ who just so happens to be married to a real life cowboy!

Ingredients:

  1. 1 pound of fresh green beans
  2. 2 tablespoons bacon grease
  3. 2 cloves  garlic, minced
  4. 1 large onion, chopped
  5. 1 cup or so of chicken broth
  6. 1/2 cup chopped red bell pepper
  7. 1/2 teaspoon salt
  8. Dash of ground black pepper

Directions:

  1. Snap the stem ends of the green beans, or cut them off in a big bunch with a knife. Melt the bacon grease in a skillet over medium-low heat.
  2. If you're cooking bacon to make grease because not many people I know keep bacon grease handy, you can chop up the bacon and use it as a garnish after the dish is made.
  3. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about another minute.
  4. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked a little bit to allow the steam to escape.
  5. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp which should take about 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.
