I love good food that's easy to make but I don't like cleaning up all night after the meal is devoured.  This week, I will focus on easy one-pot meals for a quick clean up.  On of my favorites is beef and tomato stroganoff, perfect for those Winter nights.

Shopping list (makes 4):

>> course sea salt and ground pepper

>> 3/4 pound of wide egg noodles

>> 1 tablespoon extra-virgin olive oil

>> 1 pound sirloin steak, patted dry and thinly sliced

>> 1/2 pound of button mushrooms, trimmed and thinly sliced

>> tomato sauce (left over)

>> 3/4 cup low-sodium chicken broth

>> 1/3 cup sour cream

>> grated Parmesan

1.  In a large pot of boiling salted water, cook pasta according to package instructions.  Drain.

2.  Add oil to pot and heat over high.  Add steak and cook until browned (5 minutes).  Transfer to a plate.  Add mushrooms to the pot and cook until browned or tender (3 minutes).  Add steak, reserved tomato sauce, and broth.  Reduce heat, partially cover, and simmer until steak is very tender (30-40 minutes).  Remove from heat and stir in sour cream, then add pasta, toss to coat with sauce.  Final step is sprinkle with Parmesan before serving.

3.  Enjoy.
