One of my co-workers brought in some Amish butter from Le Raysville and smothered a cracker with it and told me I didn't have a choice, I had to eat it. And so, I did. And I fell in love with Amish butter.

Each time my co-worker would offer me another cracked with Amish butter, I'd turn her down even though I didn't want to because I was worried about all the nasty health problems I've been told my whole life butter causes.

I should have listened to my stomach and not my head and just eaten more crackers with Amish butter.

New research published in the journal PLOS ONE says that there's no scientific connection between eating butter and cardiovascular disease.

I know, right?!? But it gets better. Researchers also found that eating butter could actually reduce the risk of developing diabetes.

Researchers looks at data from people who ate one serving (about a single tablespoon) of butter a day and found no connection between eating butter and risk of stroke or heart disease. The people who ate butter were actually 4% less likely to develop Type 2 diabetes.

Obviously this isn't a license to eat a whole stick of butter a day (my great aunt likes to open the fridge, pull out the stick butter and take a bite out of it). As with everything in life, moderation is important, but go ahead and use a little bit of butter to cook your eggs for breakfast or put some on your corn, it won't kill you.
